It kinda grosses me out now but when I was a kid, my mother would soak them in soy sauce, fish sauce, and black pepper. She would then deep fry them. I remember them being pretty good but like I said, I am going to pass on that now.
Fry them in a little bit of oil and salt. YUM.
or just cook them in a chicken soup.
